The program works to assure buyers will receive the exact grade each and every time they order. AQS certified salmon is offered in four grades suitable for a wide variety of applications. Premium: Premium grade is the highest of all, representing superior handling, workmanship and physical characteristics. Buyers who must please the most discerning customers can offer Premium grade, but should be aware that this grade is available in limited quantities at a premium price. Choice: Choice grade represents high quality fish that demonstrate excellent handling, workmanship and physical characteristics. Most retail and foodservice applications requiring high quality fish should consider Choice grade salmon. Select: Select grade indicates fish that have slight physical imperfections or workmanship errors. This grade is most suitable for applications where further processing would eliminate these imperfections. Standard: Standard grade includes fish that have moderate physical imperfections or workmanship errors. With further processing, this product could be used in industrial applications; for example, as an ingredient in minced or formed products.
